ALIMENTE21 is in the line of advancing the food industrial organization to a predictive, prescriptive, and intelligent management model of resources, processes and products, advancing towards augmented and autonomous intelligence, which allows reducing the environmental impact of the industry. ALIMENTE21 will increase the availability and efficiency of resources, both industrial and raw materials, and/or productive processes in the food industry and in its multiple links in the value chain, guaranteeing at the same time the safety/quality of the processes productive ALIMENTE21 will investigate digital qualifying technologies such as AI (Machine Learning, Deplearning, optimization, among others), Big Data, Edge Computing, Digital Twin. It should be noted that AI provides the greatest change that can be expected from digital technologies, providing the ability to analyze data intelligently and not imagined so far, that is, recognizing complex patterns and using them to develop predictive and prescriptive abilities.
